A blast chiller cools cooked food very quickly, from oven temperature down to storage temperature. The LR-SCE series chills from +90 °C to +3 °C in 50–70 minutes and freezes from +90 °C to -18 °C in 120–180 minutes. The trolley full of trays goes straight into the blast chiller, without moving the trays.
Fast chilling is a food safety rule: the food passes quickly through the temperature range in which bacteria multiply. Products also do not dry out and do not form large ice crystals.
The unit uses Tecumseh, Embraco or other brand compressors, with two-stage refrigeration technology, mixed refrigerants, wide-fin evaporators and powerful fans. Cooling is uniform, and products form little frost. The working temperature goes down to -80 °C.
