This gas convection oven, the ASQ series, is compact and fits many trays on a small footprint: all models have the same 900 × 1375 mm footprint and grow only in height, from 3 to 10 trays. Heat comes from gas, and the oven draws only 0.65–1.2 kW from the grid, for the fan and controls.
Temperature is adjustable between 20 and 300 °C, with a CAHO digital controller and automatic overheat cut-out. The air vent is adjustable, so the temperature is even on all trays. The automatic steam system has a timer, so steam enters the chamber for exactly as long as needed.
The standard tray is 400 × 600 mm. On request, the oven can be made for other sizes: 460 × 720, 580 × 680 or 600 × 800 mm.

All models run on 220 V, 50 Hz, with 400 × 600 mm trays.
A 10-tray electric convection oven draws around 15 kW from the grid. On gas, the same number of trays uses 1.2 kW of electricity, and the rest comes from the burner. For a pastry shop or bakery with limited electrical power, the gas version is the one that allows the oven without increasing the approved power.
