A commercial hood-type dishwasher washes a rack of dishes in about a minute. The rack is pushed under the hood, the hood is lowered, and the rotating arms wash and rinse from above and below, through 360°. The HD series washes 60 racks per hour, and the double HD120 model washes 120.
Washing is done at 55–60 °C and rinsing at 82 °C, a temperature that also sanitizes the dishes. Control is electronic, with a microprocessor program, a key panel and digital temperature display. The machine stops automatically when the hood is raised, so nobody is splashed with hot water.
The body is food-grade 304 stainless steel, 1.0–5.0 mm. The heating elements are Italian, 800 series, dry-burn resistant, made of titanium alloy with over 35% nickel. The electrical components are imported: Schneider contactors, FIR pumps, Zoppas heating elements, Invensys solenoid valves. The detergent dispenser is built in, and the fully enclosed base keeps insects and rodents out.

The undercounter machine is for bars and cafés, with glasses and few plates. The hood-type machine is for restaurants, with hundreds of plates per service: the rack goes in and out sideways, on loading and drain tables, without bending. For canteens and hotels with thousands of pieces per hour, the conveyor dishwasher is the next step.
Water, a drain and a power supply according to the model: 220 V for HD-60E (220 V), three-phase for the rest. The water inlet has a double filter so it does not clog. We recommend a water softener, so the dishes come out without limescale deposits.
