A water chiller keeps a tank of cold water at the set temperature, between room temperature and 5 °C, ready for use in production. In bakeries, cold water keeps the dough at the right temperature during mixing. Friction in the mixer warms the dough, and dough that is too warm proofs too fast and loses quality, especially in summer.
The RML series has a 100, 200, 300 or 500 liter tank and a water pump for distribution. The housing is stainless steel, looks good and is easy to dismantle.

Water temperature: from room temperature down to 5 °C.
The dough temperature when it leaves the mixer decides how fast it proofs and how the bread turns out. Bakers calculate the water temperature from the flour temperature, the room temperature and the heat produced by the mixer. In summer, tap water is too warm. The chiller supplies cold water at the temperature the recipe requires, in the quantity needed for each batch.
By the water used per batch and the number of batches. Water is usually 55–75% of the flour weight. A mixer for 50 kg of flour uses around 30–35 liters of water per batch. RML-100 covers a small bakery, and RML-300 and RML-500 bakeries with several mixers.
