The fluid and the temperature decide the grade. Food and water lines usually use 304L, while chlorides and chemical media call for 316L or a duplex grade.
The load decides the type. Thick wall industrial pipe carries heavy loads, while thin wall welded tube has a better surface and suits decoration and architecture.
