This volumetric dough divider portions dough to the set weight using the vacuum created by the piston moving in the cylinder. Each piece comes out as if cut by hand, without the dough being pressed and without damage to its structure, so it proves and bakes just like dough portioned manually.
An automatic lubrication system coats all surfaces with food-grade oil during cutting. The machine lasts longer, and the cutting group needs no separate cleaning. An improved filter stops flour and dough residue in the oil circuit from reaching the piston. The hopper and outer panels are stainless steel.

CVDM 2000 has one piston and makes up to 1800 pieces per hour. CVDM 2500 has two pistons and reaches 3600. Both portion from 50 g, for rolls, up to 1000 g, for bread. In the line, the divider is followed by the CKCR 2000 conical rounder or the CKVR belt rounder.
The price depends on the model and on the type of weight adjustment. Uzinex quotes the divider together with the mixer and the rounder, with transport and commissioning done once. Ask for a quote with the weights and pieces per hour.
