This commercial oil fryer, the RM-EF series, is electric and comes in eight versions: with one large tank or split tanks, at 9 or 18 kW, with or without an oil filtration system. Temperature is adjustable between 50 and 195 °C.
The 9 kW models measure 400 × 800 × 1100 mm and run on 220 or 380 V. They have either one 28 L tank (RM-EF-9C) or two 14 L tanks (RM-EF-9C2). The 18 kW models measure 800 × 800 × 1100 mm and run on 380 V. They have either two 28 L tanks (RM-EF-18C) or a combination of 28 L plus two 14 L tanks (RM-EF-18C2). Each version also exists with filtration, marked with the letter L in the code.
Filtration passes the oil through a filter and returns it to the tank. Debris leaves the circuit, and the oil lasts more days of frying. For a kitchen that changes tens of litres of oil a week, the saving shows quickly.

All models work between 50 and 195 °C.
Without filtration, the oil is drained and filtered by hand, with a sieve and a separate container, or changed more often. With filtration, the operation is done from the fryer, at the end of the day, without carrying hot oil across the kitchen. For a fast-food outlet or a kitchen that fries throughout service, filtration pays for itself from the oil saved.
A 28 L tank is for high volumes of a single product, usually chips. The 14 L tanks are used for different products, so the oil does not pick up flavours: fish in one, chicken in another. The RM-EF-18C2 version has both: one large tank for chips and two small ones for the rest.
