A commercial boiling kettle is a large double-walled vessel: between the cooking pan and the outer wall there is a jacket in which the heating medium is heated. The food is heated indirectly, over the whole surface, so soups, sauces, jams or puddings do not stick to the bottom, even in 100-litre batches. The GH-981 / EH-881 series comes in gas or electric, in 60 and 100 litres.
The gas kettles are GH-981, 100 L and 24 kW, measuring 800 × 900 × 920 mm, and GH-781, 60 L and 16 kW, measuring 700 × 700 × 920 mm. The electric kettles are EH-881, 100 L, and EH-781, 60 L, both at 12 kW.
The 920 mm height is that of the modular series, so the kettle lines up with the range and the tilting pan from the same family.

A 100-litre pot on a range is heated only at the bottom. The bottom overheats, the food sticks and has to be stirred constantly. In a boiling kettle the heat reaches the whole surface of the pan through the jacket, so the temperature is even and the cook does not have to stand next to it all the time.
Work it out from the portions per service. At a 300–400 ml portion of soup, 60 litres covers about 150–200 portions and 100 litres about 250–330. For school, hospital and factory canteens, 100 litres is the usual choice. For restaurants with a daily menu, 60 litres is usually enough.
