A chocolate tempering machine melts the chocolate, cools it and reheats it under control, to the temperatures at which cocoa butter crystallises correctly. Tempered chocolate comes out glossy, breaks with a snap, releases easily from moulds and does not bloom white. Without tempering, pralines come out dull and melt in the hand.
The RM-CJ30 and RM-CJ60 models come with a vibrating table. The filled mould is placed on the table, and the vibration removes air bubbles from the chocolate, so the praline surface comes out smooth, without holes.
RM-CJ30 tempers 10–25 kg of chocolate per hour, at 1.8 kW. RM-CJ60 tempers 10–40 kg per hour, at 2 kW. Both run on 220 V.

Tempering on a marble slab needs an experienced chocolatier, a thermometer and time, and the result varies from batch to batch. The machine keeps the chocolate tempered for hours, at working temperature, ready to pour. For a chocolate shop or confectionery that makes pralines daily, the machine gives the same quality on every tray.
