A commercial bain-marie keeps sauces, side dishes, purées and soups at serving temperature, in gastronorm pans set in a hot water bath. The food is heated indirectly, through the water, so it does not burn on the bottom or dry out. The GH-984 / EH-884 series is mounted on a stainless steel cabinet and runs on gas or electricity.
The gas versions have 4.5 kW and come in two sizes: 800 × 900 × 920 mm and 700 × 700 × 920 mm. The electric versions are EH-884, at 6 kW, measuring 800 × 900 × 920 mm, and EH-784, at 5 kW, measuring 700 × 700 × 920 mm.
The 920 mm height is that of the modular series. The bain-marie goes into the cooking line, next to the range, so the cook can reach the sauce without leaving the station.

During service, sauces and side dishes are prepared in advance and must be kept hot without spoiling. On a range at low heat, sauces thicken, stick to the bottom or split. In a bain-marie the heat is gentle and even, and portions are ladled out of the gastronorm pan to order.
Both hold temperature well. The gas version suits you if you already have gas in the cooking line. The electric version is easy to move and needs only a socket or a dedicated electrical connection, depending on the power.
