A rotary oven bakes a whole rack of trays at once. The rack is pushed into the oven and hooked onto the rotating platform, and hot air circulates evenly between the trays. Bread, sweet loaves, croissants or biscuits come out baked the same on every shelf, without moving trays during baking.
The RMX series has five sizes: 12, 16, 26, 32 and 64 trays. Each size exists in three heating versions: electric (D), diesel (C) and gas (M). A combined electric and gas or electric and diesel version can be made on request. All models run on 380 V, 50 Hz.

For the gas and diesel versions, the power in the table is the electrical consumption for the motor, fan and controls.
The electric version needs a lot of current: 28–77.5 kW, so a high approved power at the site. The gas and diesel versions draw only a few kW from the grid, and the heat comes from the burner. If the bakery has a gas connection, the gas version is usually the cheapest to run. Diesel remains the solution for sites with no gas and not enough electrical power.
Count what you take out per shift. A 16-tray oven suits a pastry shop or a neighbourhood bakery. 26–32 trays is the usual size for bakeries that deliver to shops. 64 trays is for industrial production.

The rotary oven needs a level floor that can take the weight, a flue for combustion gases on the gas and diesel versions and a steam hood at the door. The gas connection is made by an ANRE-authorised gas fitter. The Uzinex team carries out assembly and commissioning on site.
