This commercial dough mixer, the LM series, is made for bakeries that knead a lot and often: 25 to 100 kg of dough per batch. The bowl is fixed, not removable, so the machine stays stable and rigid at maximum load. The spiral arm passes less than 5 mm from the bowl wall, so the flour is fully incorporated. The manufacturer states fast kneading, in about 5 minutes.
The motor has copper windings: high torque, low noise and little heating. The start and emergency stop buttons are ABB. The mechanical timer stops kneading at the set time, so the dough is not over-kneaded. The paint is automotive grade, durable and easy to clean.
All models have two arm speeds (120 and 240 rpm) and two bowl speeds (20 and 40 rpm) and run on 380 V.

A fixed bowl makes the machine more rigid and simpler: there is no locking mechanism, and the dough is removed by hand or with a separate tipping device. A removable bowl is taken out with the dough in it and moved to the divider, and the mixer starts the next batch straight away with another bowl. For continuous production, with many batches per shift, the removable bowl saves time. For large, infrequent batches, the fixed bowl is sturdier.
