A dough sheeter rolls dough out by passing it between two rollers, in successive passes, thinner each time. The RMQ series has a reversible belt: the dough goes back and forth between the rollers, and the gap between them closes with each pass, from 50 mm down to 1 mm. It is operated from a handle or a pedal, so the pastry chef has both hands free for the dough.
The sheeter does in a few minutes what would take a long time with a rolling pin: puff pastry sheets with even layers of butter, croissant dough, pie dough, thin pizza dough, tart and biscuit dough at a constant thickness.
The series has 4 floor-standing models, with 400, 500, 600 and 650 mm wide belts, plus the RMQ-520CUT model, which also has a cutting device. All run on 220 or 380 V.

The roller gap is adjustable between 1 and 50 mm. Supply: 220/380 V.
Puff pastry and croissant dough have tens or hundreds of thin layers of dough and butter. If the thickness varies, the butter breaks, the layers stick together and the pastry no longer rises. The sheeter rolls to the same thickness across the whole sheet, on every pass, and the dough does not warm up in the hands.
The belt width gives the maximum sheet width. 400 mm is enough for a small pastry shop. 500–520 mm is the usual size, suited to 400 × 600 mm trays. 600–650 mm is for large production and long sheets. Folded against the wall, the sheeter takes up much less space than when open.
