A dough moulder takes the proofed dough ball and turns it into its final shape: it rolls it, presses it and lengthens it. The RMZ series has three machines, each for a different product: RMZ-750 for baguettes, RMZ-380 for toast bread and RMZ-280 for buns and small products.
RMZ-750, the baguette machine, has a knob regulator and a calibration scale for precise adjustment. The rollers are made of food-grade material, with even pressure. The feed opening takes pieces of 50 to 1250 g, and the machine moulds about 1200 pieces per hour.
RMZ-380, the toast machine, has a non-stick surface, a food-grade belt and wear-resistant gears. The pressing plate gap is adjusted to the type of bread, to control the rolling length. It produces 1000–3000 pieces per hour, from 10–1000 g of dough.

All models run on 220 or 380 V.
Moulding by hand is the longest step for baguettes and toast bread. A good baker makes a few hundred pieces an hour, with slightly different shapes. The machine makes up to 1200 baguettes an hour, all the same length and with the same tightness, so they bake the same and fit the same on the tray.
By your main product. Bakeries that make baguettes and long loaves choose RMZ-750. Factories and bakeries that make toast bread and tin bread choose RMZ-380. Pastry shops and cafés that make buns, crescents and small products choose RMZ-280.
