A proofer keeps dough at constant warmth and humidity until it rises. The XF series has a stainless steel body and shelves, a safety glass door and hot air circulation, which spreads temperature and humidity evenly through the whole chamber. The dough rises the same on every tray, and the surface does not dry out or form a skin.
The water tank fills automatically, so it never runs dry. All models have 1.6 kW and run on 220 V, so they fit in any workshop, next to the oven.
The series has 7 sizes, from 5 to 32 trays. The 13–32 tray models are tall, cabinet-style, with one or two doors.

In a workshop, temperature and humidity change from one day to the next and from summer to winter. Dough sometimes rises in 40 minutes, sometimes in two hours. In a proofer the conditions are always the same, so proofing time is predictable and production can be planned. Products come out fluffier and more uniform.
Choose by the oven. The proofer must hold at least the trays the oven bakes in one batch, so you always have a batch ready to go in. For a 5-tray oven, choose 10–13 trays in the proofer. For a 3-deck oven, choose 16–26 trays.
