A hydraulic dough divider splits a large piece of dough into large, equal portions by hydraulic pressing. Hydraulic pressing is even and gentle on the dough, which is why the hydraulic divider is used for soft, well-hydrated doughs: sourdough bread, baguettes, ciabatta, white bakery bread.
RMK-16H divides into 16 pieces of 125 to 1000 g. RMK-20H divides into 20 pieces of 100 to 800 g. A cycle takes 10–20 seconds, which matters in high-volume production. Both models have 1.5 kW and run on 220 or 380 V.

Volumetric dividers cut the dough by volume, with a piston, and are very fast. The hydraulic divider presses all the dough at once and then cuts it into equal pieces. The dough is stressed less, so its structure is preserved. For artisan bread, with soft dough and an open crumb, the hydraulic divider is the right choice.
By bread weight. For large loaves of 500 g to 1 kg, choose RMK-16H. For baguettes, 300–400 g loaves and large buns, RMK-20H gives more pieces per cycle.
