A commercial planetary mixer spins the attachment around its own axis and, at the same time, around the bowl, like a planet around the sun. The attachment reaches the whole bowl, so cream, meringue, creams and soft doughs are beaten evenly, with no unmixed corners. All components of the RMD series are made of food-grade stainless steel.
The series has 9 models, from a 10 L bowl to an 80 L bowl. The drive runs at high speed and handles overload well. Models up to 80 L run on 220 or 380 V. The Auto Life versions, of 60 and 80 L, run on 380 V.

It whips cream, egg whites and meringue. It makes buttercreams, ganache, pastry creams and glazes. It mixes soft doughs: sponge, pound cake, muffins, biscuits. It makes purées, fillings and sauces in quantity. With the hook, it also kneads light doughs, in small quantities.
The planetary mixer is for soft mixtures and for incorporating air: creams, meringues, cake batters. The spiral mixer is for heavy, elastic doughs: bread, pizza, sweet bread. If you often knead bread dough in a planetary mixer, the motor gets overloaded and wears out. For bread, choose the spiral mixer.
10–20 L is for small confectioneries, restaurants and cafés that make their own desserts. 30–40 L is the usual size in a confectionery or pastry shop with daily sales. 60–80 L is for workshops that supply several points of sale.
