A commercial Neapolitan pizza oven has a dome and a round deck, so the fire or the heating elements heat the pizza from all sides. The GD-PO series reaches 500 °C, and at that temperature a Neapolitan pizza bakes in 90 seconds: a puffed, leopard-spotted rim, a soft centre and a thin base.
The oven has an 800 mm internal diameter and weighs 900 kg. The exterior measures 1200 × 1250 × 1900 mm and is covered in mosaic, in the colours you choose and with the venue's logo. The oven becomes part of the pizzeria's decor.
The series comes in three heating versions: electric (GD-ElectricPO, 12 kW, 380 V), gas (GD-GasPO) and wood-fired (GD-WoodPO). Temperature is controlled by a Japanese-made precision regulator.

With wood you get the classic taste and show, but you need a chimney, a wood store and a pizzaiolo who knows how to keep the fire going. On gas, the temperature is set with a knob and the flame stays visible. On electric you need no chimney or gas connection, and the temperature holds steady. In shopping centres, where an open flame is usually not allowed, the electric version is usually the only possible one.
A stacked chamber oven bakes at 300–450 °C, in a few minutes, several pizzas in separate chambers. The Neapolitan oven bakes at 450–500 °C, in 90 seconds, on a round deck. If you sell authentic Neapolitan pizza, the dome oven is the one that makes it. If you make classic pizza, the chamber oven is simpler to operate.
