A commercial pasta cooker keeps water at the boil throughout service, and portions of pasta, noodles, gnocchi or vegetables are cooked in separate baskets that are lifted out and drained in one move. The GH-988 / EH-888 series is mounted on a stainless steel cabinet and comes in gas or electric, in two sizes.
The gas versions, GH-988 and GH-788, have 12.4 kW. The electric ones, EH-888 and EH-788, have 18 kW. Models with 8 in the code measure 800 × 900 × 920 mm and belong to the 900 mm line. Those with 7 measure 700 × 700 × 920 mm, for narrower kitchens.
The 920 mm height is the same as that of the ranges, fry tops and fryers in the series, so the pasta cooker goes into the same cooking line, next to the range.

On a range, a large pot of water takes up a burner all day and takes a long time to come back to the boil after you drop the pasta in. The pasta cooker has its own tank and its own power, so the water returns to the boil quickly, and portions are cooked in baskets, each with its own timing. The range burners stay free for sauces.
Choose the gas version if the kitchen already has gas for the range and a hood above the line. Choose the electric version if you have no gas or want to move the unit easily. The electric version has 18 kW and needs a three-phase supply from a dedicated circuit.
