Model ZH-RG-L / JZH-RG-L is a gas fry top: a frying plate mounted on a stainless steel cabinet. Two thirds of the plate are smooth, for eggs, pancakes, fish and vegetables, and one third is ribbed, for meat that should come out with grill marks. The cabinet below keeps pans and utensils within reach.
Model ZH-RG-L measures 800 × 900 × 970 mm and weighs 70 kg, while JZH-RG-L measures 700 × 750 × 910 mm and weighs 65 kg. The manufacturer's catalogue gives the output in MJ/h: 13.67 MJ/h for ZH-RG-L and 39.31 MJ/h for JZH-RG-L.
On the ribbed plate, meat fries without sitting in fat, and the grill marks give dishes a grilled look without a separate grill. On the smooth side you cook everything that needs full contact with the metal.

On gas, the plate heats up quickly and recovers temperature fast after you put cold meat on it, which matters during lunch service. On electric you need no gas connection, and the temperature holds very steadily. If the kitchen already has gas for the range, the gas fry top goes on the same installation. If not, the electric version EG-886 / EG-786 is the alternative.
Burgers, pork neck and chicken breast, sausages, mici, fish, seafood, eggs, omelettes, pancakes, sautéed vegetables. In breakfast kitchens, the fry top takes care of eggs and bacon. In burger bars it is the unit that cooks all the meat.

The connection is made by an ANRE-authorised gas fitter. The fry top needs a hood with grease filters above it. The plate is cleaned with a scraper while it is still warm, at the end of service, and the fat collects in the drip tray.
