Model ZH-RH-L / JZH-RH-L is a gas lava rock grill: the burners heat a layer of volcanic stone, and the stone radiates heat evenly to the grill grate above. Fat dripping from the meat falls onto the hot stone and turns into smoke, which gives the food a charcoal-grilled taste without charcoal.
Both models have 61.87 MJ/h. ZH-RH-L measures 800 × 900 × 970 mm and weighs 80 kg, while JZH-RH-L measures 700 × 750 × 910 mm and weighs 70 kg. Below the grill there is a stainless steel cabinet for pans and utensils.
For a restaurant, the lava rock grill solves the charcoal problem: there is nothing to light, no waiting for embers and no ash to carry, and the temperature is set at the valve. The grilled taste stays.

Charcoal gives the classic taste, but also embers to prepare an hour ahead, a temperature that is hard to control and ash to carry out. On lava rock the grill is ready in a few minutes, the temperature is set with a knob, and the taste comes from the fat burning on the stone. For a restaurant kitchen with continuous service, lava rock is the practical option.
The lava rock is turned over periodically, so the fat collected on it burns off, and replaced when it becomes too saturated. The grate is cleaned with a brush while warm. The tray below catches whatever does not reach the stone.
